Mandarin & Poppy Seed Cake
Its winter time and with the cold always comes a little indulgence! But with our delicious Mandarin & Poppy Seed Cake being Gluten and Dairy free you can indulge a little more without the guilt!
A delicious, simple recipe using the mandarins (can substitute with oranges) from this months fresh food box and a few staples!
- 4 small (2 large) mandarins
- 4 eggs
- 1 cup (200g) raw sugar
- 3 cups (300g) almond meal
- 1 tsp baking powder
- 1 ½ tlb poppy seeds
To make this delicious cake simply preheat oven to 170C. Line a 22cm round tin with baking paper.
Then roughly chop the mandarins, removing any pips in the process. Before pureeing the mandarins with a blender till smooth.
Use an electric mixer or beater and whisk the eggs and sugar in a large bowl until thick and pale.
Gently fold in the mandarin puree, almond meal, baking powder and poppy seeds and mix until just combined.
Pour into the lined tin and bake for 50-60min or until a skewer inserted into the centre comes out clean.
Finally allow to cool then serve with dusted icing sugar and violets, cream, ice cream or Greek yoghurt.
So simple yet so delicious!
