Here is a great way to get some extra veg into your meals and use any left veg as well! These delicious Chicken and veg Nuggets are sure to be a winner with the entire family and are super simple to make!

Ingredients – Nuggets

  • 500g chicken mince
  • 300g grated carrot, sweet potato & zucchini (Or veg of choice!)
  • 2 tlb oil
  • 2 garlic cloves crushed
  • 2 tlb finely chopped parsley or coriander 
  • 1/4 cup quick oats
  • 1/2 tsp chicken stock powder
  • 1/2 tsp salt 
  • 1/2 tsp pepper

Ingredients – Crumb Coating

  • 1/2 cup plain flour
  • 1/2 tsp chicken stock powder
  • 2 eggs
  • 1 1/2 cups of bread crumbs, quick oats, crushed corn chips or cornflakes
  • Extra oil for frying – 1/4-1/2 cup

Method

Saute the mixed grated vegetables and crushed garlic in oil in a frypan on medium heat for 5-10min until softened then allow to cool.

Place the cooled vegetables, mince, oats, herbs, salt, pepper & stock powder in a large bowl. Use clean hands to mix until well combined.

In one bowl mix the stock powder with the plain flour.  In another bowl lightly whisk 2 eggs. In the 3rd bowl place your choice mix of   bread crumbs, quick oats, crushed corn chips or cornflakes.

Shape heaped tablespoons of the mixture into nugget shapes. Toss lightly in the plain flour, then egg  crumb coating, pressing to firmly coat and shaking off any excess crumbs.

Lightly shallow fry them, turning a few times until golden. Serve with tomato or sweet chilli sauce!

Note: If you want to hide the veg even more, you can puree up the cooked veg before mixing it in with the chicken.

And why not add a small cube of halloumi in the middle of the nugget before crumbing for extra cheesy goodness!!
