With the weather getting colder its a perfect time for soup! Here we have a wonderful little soup perfect to take away those winter chills!

INGREDIENTS

  • 4 tlb light olive oil
  • 2 large garlic cloves crushed
  • 1 onion diced
  • 4 tsp of thyme and or rosemary
  • 2 tsp sweet or smoked paprika
  • 2 tsp brown sugar
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 cups or 300g sweet potato and or pumpkin cubed
  • 800g fresh or tinned tomatoes finely chopped
  • 800ml vegetable stock
  • 400g cannellini or butter beans (optional)
  • Salt and pepper to taste

METHOD

Heat oil in a large saucepan over medium heat. Saute onion and garlic on medium heat for 5 min until they soften and slightly caramelise.

Add in celery, carrot and fresh herbs and saute for 5 min.

Add sweet potato and saute for another 5 min.

Pour in tomatoes and stock. Bring to the boil over high heat, then reduce heat to low and gently simmer for 10 minutes.

Stir paprika, sugar and cannellini beans and cook on low for 10 more minutes.

Season with salt and pepper (or chilli if you like) to taste and serve

You can mix in some leftover celery leaves (reduces waste) and or parsley just before serving. Other great additions could be toasted nuts, shaved parmesan or some sliced fried chorizo! Its really up to you!

The veg in this recipe can also be changed up and its a great way to use those leftovers or the amazing produce in our Fresh Food Box!
