Our July fresh food box is heading out across Melbourne and Victoria early next week and is packed with amazing fresh fruit and Veg! Previously we have been adding in printed versions of our recipes to our food box, but in order to reduce our environmental impact and to provide even more delicious recipes to our food box subscribers we have decided to bring them online!

So to kick start our online recipes we are bringing you one of CEO’s favourite winter dishes to cook – A beautiful Chicken Cacciatore with Bulgur Wheat salad! Many of the ingredients will be in this months fresh food box, but you can also supplement/change them in the Bulgur Wheat Salad for anything you desire.

Ingredients:

Chicken Cacciatore

– 4 large Chicken thighs

– 250ml Red Wine

– 5 Flat Mushrooms

– Olives

– 8 Bay Leaves, Garlic, Rosemary, Salt, Pepper, Olive Oil

– Onion/leek and Bacon/Pancetta

– 1 Tin of Tomatoes 

Bulgur Wheat Salad

– 1 large cup of Bulgur Wheat (Or any other type of grain you would like to use!)

– 1 1/2 bulbs of fennel

– 2 Red Onions

– Red and Yellow Capsicum

– Zucchini

– White Wine Vinegar

– Parsley

– Salt, Pepper, olive oil, Rosemary & Garlic

Method:

Chicken Cacciatora

– Marinate the chicken in the red wine with the bay leaves, garlic, rosemary and seasoning for at least 2hrs

– Pre heat oven to 180c

– Drain the chicken and reserve the marinade

– Cook off the leek/onion and the bacon/pancetta

– Add in some of the marinade and reduce the liquid

– Add the tin tomatoes

– Add the chicken to the dish and the mushrooms and olives

– cook uncovered for 1hr or until chicken falls of the bone

Bulgur Wheat Salad

– Chop all veg

– coat in olive oil

– season with salt and pepper

– Add in the garlic and rosemary

– roast until golden

– Place bulgur wheat in pot with boiling water and cover, add more boiling water as required

– Drain wheat and cool once tender

– Remove veg and hit with a generous splash of white wine vinegar and allow to cool

– Once cooled finely chop the parsley and fennel tops and combine everything , check the seasoning
