Roast Vegetable Tacos!
Is there are better easy and cheap meal then the humble taco?? we really don’t think so! And these easy Roast Vegetable tacos are an absolute treat!
Made using some of the beautiful fresh ingredients from our monthly food box they are sure to be a hit with the entire family!
- 6 large or 12 small to medium soft tacos/wraps
- 1/2 a large Sweet Potato (300g)
- 1/4 small Pumpkin (300g)
- 1 large or 2 small Red or Green Capsicum
- 1 Parsnip
- 1 Onion4 Tlb Oil
- 1 Tsp Salt
- 1 Tsp Brown sugar
- 2 Tsp Smoked paprika
- 2 Tsp Sweet Paprika
- 2 Tsp Coriander ground
- 2 Tsp Cumin Ground
(alternatively you can use 1 packet of taco seasoning)
- 2 Avocados
- 1 Lemon or Lime (Juice)
- 2 tlb fresh coriander or parsley roughly chopped
- 1/2 Tsp Salt
- 1/2 Tsp Brown Sugar
- 1 small clove crushed garlic (optional)
- Chilli (optional)
Plain yoghurt to serve!
Pre heat your over to 180c, cut the onion into wedges and seperate and cut all other vegetables into thick sticks. No need to peel (we want to keep the nutrients) just wash first.
Place all the vegetables in a large bowl and evenly coat with oil, adding in the spice mix and toss well.
Evenly spread onto a lined baking tray and roast till lightly golden – approx 45min
To make the guacamole simply mash the 2 advocados and mix in the lemon juice, fresh herbs, salt and sugar.
Serve by spreading the guacamole on the base of the taco, top with the roast veg, add a dollop of fresh yoghurt and sprinkle with fresh parsley or corriander.
